Which milk? What we are actually choosing between dairy, oat, coconut, almond, and soy

A decade ago, the question 'which milk?' mostly meant how much fat do you want. Today the same sentence can take a while: oat, coconut, almond, soy, dairy, or lactose-free dairy. The choice looks like a matter of taste, but we have since turned it into a question of health, identity, and occasionally morality.

The simplest thing would be to declare a winner. Dairy milk has poor PR in one corner of the wellness internet, while plant-based drinks in another automatically receive the halo of a lighter, healthier choice. The problem is that the word "plant-based" says what a product started from, but says little enough about what is actually in the glass. Oat, coconut, almond, and soy are not four flavours of the same nutritional thing.

Dairy milk is the most predictable among them. It naturally contains quality protein, calcium, phosphorus, vitamin B12, and other micronutrients — the precise composition depending on fat content and processing. Lactose-free dairy is nutritionally very close: it is not a plant-based alternative but ordinary dairy milk in which the enzyme lactase has broken lactose down into simpler sugars. This is why lactose-free milk can taste slightly sweeter without any sugar having been added.

For someone who tolerates lactose well, there is no need to stage a health competition between regular and lactose-free milk. Lactose-free milk exists primarily so that people with lactose intolerance can drink milk without the symptoms lactose can trigger. If lactose is digested normally, removing it does not make milk healthier.

Plant-based drinks are a far less homogeneous category. Soy is usually closest to dairy in protein content, while oat, almond, and especially coconut can contain significantly less. Calcium, vitamin D, and B12 in plant versions often come through fortification, meaning two cartons that look nearly identical on the outside can have very different nutritional profiles. The amount of added sugar also varies by product.

That is why "I switched to plant milk" is not a complete sentence nutritionally. Which one did you switch to?

Oat has become the near-default partner for specialty coffee. It has a naturally mild, slightly sweet profile and can produce a texture that works well in a cappuccino or flat white. Nutritionally, however, it is not dairy milk made from oats: it typically contains less protein, and its micronutrient composition depends on fortification. Its main advantage in the cafe is often taste and texture, not some secret superiority of oats as an ingredient.

Almond is usually lighter, less creamy, and carries a recognisable nutty aroma. The amount of almond in commercial drinks can be relatively small, so protein should not be assumed simply because almonds themselves are a nutritionally rich food. In some coffees the flavour works beautifully; in others it can shift the balance more than desired.

Soy is nutritionally the most interesting precisely because it defies the stereotype that all plant milks are flavoured water. On average it delivers substantially more protein than most other plant drinks and can be a serious substitute for dairy when overall dietary adequacy matters, not just the taste of a single coffee. Meta-analyses of randomised trials provide no basis for the notion that soya is a problem to be avoided; substituting dairy milk with soy in trials did not worsen cardiometabolic markers, and in some outcomes results favoured soy.

Coconut is an entirely different story. It has a pronounced flavour of its own and typically far less protein than dairy or soy. We do not choose it because we are trying to make a nutritional copy of milk, but when its taste and texture make sense in a specific drink. That is precisely why we use it in our matcha drinks.

Here VERA has a deliberately different rule than for coffee. With coffee we offer a choice — oat, coconut, almond, soy, regular dairy, or lactose-free dairy — because different people want different flavours and have different needs. With matcha there is no dairy. The Matcha Raf and Iced Matcha are made with coconut milk, while the Matcha Shot is ceremonial matcha and water.

The reason is not an ideology against milk. We choose matcha in part for its natural catechin profile, including EGCG, and there are controlled human data indicating that simultaneous intake of dairy proteins can reduce the bioavailability of a portion of galloylated catechins from green tea. The science on this question is not simple enough to say that milk cancels matcha, but it is sufficiently serious for us not to combine ceremonial-grade tea with dairy when we do not have to.

With coffee no such reason exists. There, the far more interesting question is what happens to flavour.

Milk in coffee is not a neutral white liquid. Proteins, fats, carbohydrates, aroma, and texture change how we experience espresso. Oat can amplify the sense of sweetness and give a full body; almond introduces a nutty note; coconut is more aromatic; soy has its own texture; and dairy milk, through its particular ratio of lactose, protein, and fat, creates the profile much of the world is accustomed to. Lactose-free dairy often tastes somewhat sweeter precisely because of the breakdown of lactose.

There is therefore no single milk that is best for every coffee and every person. A barista may have a preference for a particular bean and recipe, a dietitian may look at protein and fortification, and a guest may simply observe that their cappuccino tastes better with oat. All three perspectives can be simultaneously legitimate.

If a plant drink is used only in one coffee a day, there is probably little point making it a nutritional project. If it completely replaces dairy milk and dairy products in the diet, the label becomes more important: protein, added sugar, calcium, vitamin D, and B12 can differ substantially. The illustration of an oat or almond on the front of the carton cannot answer those questions.

Perhaps that is precisely the problem with the whole milk debate. We keep trying to find a single winner where we actually have several different products serving several different needs.

If you enjoy dairy and tolerate it well, there is no need to fear it simply because the aesthetic of the wellness internet has changed. If lactose is an issue, lactose-free is a very straightforward solution. If you choose plant-based for taste, ethics, or personal preference, you have oat, coconut, almond, and soy — but it is worth knowing they are not nutritionally interchangeable just because they all come in a similar carton.

And in the cafe, we can permit ourselves the simplest question of all: which one makes your coffee taste best?

Sometimes the answer will be oat. Sometimes soy, almond, or coconut. Sometimes it will be regular dairy, sometimes lactose-free.

With matcha, we have already decided. There, it is coconut.
